One Pot Spanakorizo (Greek Spinach Rice) Recipe

  • tbsp.  olive oil
  • medium onion chopped
  • garlic cloves chopped
  • tbsp.  dill chopped and divided
  • 1/2  lb.  baby spinach
  • cup rice brown, white or basamiti
  • cups  vegetable broth
  • tbsp.  butter
  • tbsp.  lemon juice
  • feta cheese

  1. Heat the olive oil in a large pot over medium-high heat and sauté onions until translucent.
  2. Add garlic, then dill. Sauté for another minute or two.
  3. Add the spinach, and cook for 3-4 minutes, just until it wilts down.
  4. Add the salt, pepper, rice, and vegetable broth and stir.
  5. Bring it to a boil, cover and reduce the heat to medium-low. Simmer for 20 minutes.
  6. Stir in the butter and lemon juice.

  7. Garnish with feta cheese and lemon wedges. Serve.
