Chicken Potato Casserole Recipe

This chicken potato bake is the perfect recipe for when you are in a hurry!  While there is some baking time, the prep time is fast and you can be doing other things while it bakes.

  • Medium sized potatoes any type cut into 3/4" cubes don't peel, the peel has most of the vitamins.
  • tablespoon  Minced garic
  • 1.5  tablespoons  Olive oil
  • 1 tbsp Dried Rosemary
  • 1/8  teaspoon  Salt
  • 1/8  teaspoon  pepper
  • 4 Chicken thighs
  • 3/4  cup  shredded mozzarella cheese
  • Parsley  optional, freshly chopped


  1. Preheat oven to 425 degrees F

  2. Place the potato cubes in a large bowl, add the garlic, olive oil, rosemary, salt, and pepper, and toss to coat.

  3. Spray a large (9x13) baking dish with olive oil spray. 

  4. Spread potato mixture in dish and bake 15 minutes.

  5. Remove baking dish from oven and place the chicken pieces in the dish on top of the potatoes.  Brush the top of each chicken piece with a little olive oil and season with salt and pepper.

  6. Bake 20-25 minutes, until chicken is cooked and potatoes are browned.
  7. Sprinkle the mozzarella cheese over the top, return to the oven just long enough to melt the cheese.

  8. Garnish with parsley if desired

Recipe Notes

If you use a larger baking dish than the one pictured, you can spread the chicken and potatoes out more evenly when adding the chicken.  However, using the deeper one pictured lets more of the chicken juices drip onto the potatoes.  Either way works fine.
