Spinach, Feta & Ricotta Cheese Casserole
If you have people in your family that don’t like spinach, this delicious spinach, feta & ricotta cheese casserole will have them asking for more.
This recipe is basically a gluten-free quiche that you can prepare in just a few minutes, then do something else while it is baking.
- 3 eggs lightly beaten
- 2 cups ricotta cheese
- 1 10 ounce package frozen chopped spinach thawed and well drained
- 1/3 cup crumbled feta cheese
- 1/4 cup butter melted
- 3 tablespoons corn starch
- 2 teaspoons dried minced onion
Preheat oven to 350 degrees F. Grease a 1-1/2-quart casserole or pie dish, set aside. In a large bowl, combine eggs, ricotta cheese, spinach, feta cheese, melted butter, corn starch and onion. Transfer mixture to the prepared casserole dish.
Bake, uncovered, about 45 minutes or until center is nearly set (160 degrees F). Makes 4 to 6 servings.
Note: By using corn starch instead of flour you have a recipe that is gluten-free if there are people in your family that are gluten intolerant. Otherwise you can use flour.
