Food Stock Photos

If you are in the mood for some quick and easy German food tonight, this one skillet sausage and sauerkraut recipe should do the trick.

    Diced Poblano Pepper

    1 T Olive Oil

  • 1 lb. link sausage
  • 1 medium onion sliced
  • About a dozen baby potatoes, diced
  • 1.5 cups sauerkraut, drained and rinsed
  • 1.5 cups chicken bouillon mixed with 2T white wine vinegar
  • 1 poblano pepper, diced
  • 2 small red peppers, diced
  • 1/2 tsp. caraway seeds
  • 1/2 tsp. ground black pepper
  • 1 bay leaf

    In a large cast iron skillet, cook sausage links and drain

  • While the sausage is cooking, cook potatoes in microwave until about 3/4 done, slice onion and dice peppers
  • Add the potatoes, onion, sauerkraut, chicken stock and white wine vinegar, peppers, caraway seed, black pepper and bay leaf
  • Cook, stirring occasionally until potatoes are fully cooked and most of liquid has evaporated.  Remove bay leaf and serve.
