Salisbury steak takes ordinary hamburger and turns it into something extraordinary.  Crispy on the edges, tender and flavorful on the inside.  Add the rich mushroom gravy and the ease of one skillet cooking (I prefer to use a cast iron skillet or dutch oven) and you have the perfect recipe. Serve it with some potatoes, bowtie pasta or egg noodles.  Salisbury steak is a class comfort food!

Ingredients for the patties:

  • 1 lb. ground beef
  • 1 large egg
  • 1/3 c. bread crumbs
  • 1 tbsp. ketchup
  • 1 tbsp. Worcestershire sauce
  • 1 Garlic clove, minced
  • salt and black pepper
  • 1 tbsp. extra-virgin olive oil

Ingredients for the mushroom gravy:

  • 2 tbsp. butter
  • 1 diced onion
  • 2 sprigs thyme, or substitute dried thyme leaves
  • 1/2 c. Mushrooms, thinly sliced
  • 2 tbsp. all-purpose flour
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. tomato paste
  • 1 c. beef stock
  • salt and ground black pepper

Patty Directions:

  • In a large bowl, combine beef, egg, bread crumbs, ketchup, Worcestershire sauce and garlic. Season with salt and pepper.  Shape into four patties.
    In a large skillet over medium heat, heat oil. Sear both sides of the patties until a crust forms, about 5 minutes per side.
  • Remove onto a plate.

Mushroom Gravy Directions:

  • Wipe out skillet and add butter. Add onions and thyme and stir until onion becomes translucent.
  • Add mushrooms and cook until browned and tender, about 4 minutes.
  • Sprinkle onions and mushrooms with corn starch and stir until they are fully coated.
  • Cook another 2 minutes, add Worcestershire sauce, tomato paste, and beef stock. Stir to combine.
  • Add salt and pepper to taste
  • Bring the gravy to a simmer and return the patties to the skillet.
  • Cover and cook until patties are done, about 10 to 15 more minutes,
  • Serve.

When serving with bowtie pasta, I usually spoon some of the gravy over the pasta and top with one of the patties. When serving with mashed potatoes I usually spoon mushroom gravy onto the potatoes and serve the patty to the side. Of course that is just my preference.
