Recipe: Grilled Zucchini with Lemon, Garlic & Parmesan Cheese
Zucchini doesn’t have to be boring! This Grilled Zucchini with Lemon and Garlic is a perfect summer food. Just toss it on the grill with the other food, or cook it in a cast iron grill pan like we did here.
Grilled zucchini has the added advantage of being a healthy recipe with that is fast to make and easy to clean up after.
The perfect summer food. Try this the next time you fire up the barbecue grill.
- 1/4 cup butter melted
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1 lemon juiced
- salt and pepper to taste
- 2 zucchini sliced into 1/4 inch slices sliced into 1/4 inch slices
- 2 tablespoons parsley
- 1/4 cup parmesan cheese
Whisk butter, garlic, Italian seasoning, lemon juice; salt and pepper together in a small bowl.
Brush zucchini slices with butter mixture.
Heat a grill pan to medium high (or use the barbecue grill).
Arrange zucchini onto pan in a single layer. Grill until golden brown grill marks appears and zucchini is beginning to soften. This takes a minute or two per side.
Sprinkle with parmesan cheese and parsley (if desired) and serve immediately.
This makes a delicious vegetable to accompany any meal, but I find this grilled zucchini recipe is perfect for summertime cookouts on the barbecue grill!
