I am repeatedly hearing about the incredible health benefits of Brussels sprouts and have been looking for more ways to enjoy them. This one cast iron skillet recipe is an easy and delicious way to do so.

Here is how to enjoy it.

Ingredients:

recipe blog1.5 lb. boneless, skinless chicken thighs
2 tsp. thyme
Salt and pepper to taste
1 tbsp. olive oil
Approximately 12 oz. shredded Brussels sprouts (you can sometimes find these pre-shredded)
1 large diced red delicious apple
1 clove chopped garlic
2 tbsp. balsamic vinegar
2 tsp brown sugar
1/3 cup chopped roasted pecans

Directions:

chicken dinner recipeSprinkle thyme, salt and pepper on chicken thighs.  Add olive oil to hot cast iron (we prefer cast iron for even heating and health reasons) skillet and then the chicken.  Cook over medium high heat until fully cooked.  About 4 – 5 minutes per minute.  Remove from pan.

Add shredded Brussels sprouts, diced apple, onion and garlic to skillet.   Cook about 5 minutes, stirring frequently until sprouts are wilted and onion softened.  Add balsamic vinegar and brown sugar.  Stir.

Return chicken to pan.  Sprinkle with chopped pecans and serve directly from skillet.
