Hot Spinach Mushroom Quinoa Salad
There are a lot of reasons to make this hot spinach mushroom quinoa salad recipe. It’s very easy to cook, very economical and it’s a one pot recipe for easy cleanup. Best of all there is not one ingredient in it that isn’t completely good for your health.
We know from watching Popeye that spinach is good for you, mushrooms are also noted for their healthy qualities, but I’ve learned quinoa is one of the most undiscovered superfoods there is. The quinoa is a complete protein so when combined with the mushrooms and onions you have a nutritionally balanced meal.

This is the first recipe I’ve tried it in. It’s enamel coated cast iron that gives the even heating of cast iron with the cleanup ease of enamel.
- 1 pound mushrooms sliced
- 3 garlic cloves minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 onion diced
- 10 oz fresh spinach
- 2 cups quinoa cooked
- salt and pepper to taste
- Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms, onions and garlic and saute over medium-high heat for about 5 minutes. Mushrooms should be nicely browned and onions browned and tender.
- Add spinach, reduce heat to low, and cook about one more minute, stirring frequently until spinach is wilted.
- Add the cooked quinoa to the skillet. Cook about 1 more minute to warm quinoa (if needed).
Season with salt and pepper to taste and serve hot.
Note: This is also quite delicious cold. You can also substitute olive oil for the butter if you want it to be a vegan meal.
