It’s better if it has time to chill and let the flavors mix a while before serving, but that isn’t totally necessary. You can also substitute frozen spinach if you don’t have any fresh handy, just be sure to thaw it and remove the moisture before mixing it in.
- 1 16-ounce container sour cream
- 1 cup finely chopped fresh spinach
- 1/2 cup chopped chives
- 2 tablespoons fresh parsley finely chopped
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
- Combine all ingredients in a mixing bowl; mix well.
- Cover and chill.
Note: Allow this to chill long enough for the flavors to blend. Overnight if possible.
