Easy Corned Beef and Hash Recipe
This is probably the easiest corned beef and hash recipe you will ever eat. Clean up is a snap as it’s also a one pot recipe! If you are looking for a filling, hearty, economical meal in a hurry, try it.

This is the corned beef and hash recipe you want to use when you are in a hurry.
- 1 8 oz can corned beef
- 3 tbsp olive oil
- 1 28 oz bag of Potatoes O'Brien or diced potatoes, see notes
- salt and pepper to taste
Heat the the olive oil in a frying pan
While heating cut the corned beef into 1/2 inch cubes
Add potatoes and corned beef to the pan with hot oil and sear until browned. Do not stir, let it brown and turn it as you would hash browns or it will get mushy. (Test to see if ready to turn by lifting up with a spatula.)
When first side is browned, flip the mixture with the spatula a bit at a time and cook the other side until browned.
Season with salt and pepper and serve.
Potatoes O'Brien have bits of onion and red and green bell pepper in them. If you can't find Potatoes O-Brien in your grocer's freezer case, then dice a medium onion and some bell peppers and salute them a bit first.
Of course you can disc raw potatoes too. If so, let them brown a bit before adding the corned beef (as it is pre-cooked).
However, the idea behind this recipe is to be fast and easy which is why we went with canned and frozen ingredients.
