Delicious Curried Chicken Salad

This delicious Curried Chicken Salad Recipe is easy to make and delicious. It makes a perfect side dish to go along with the goodies cooked on the barbecue grill for your Memorial Day and Fourth of July cookouts.

  • 1/4  cup  mayo
  • 1/4  cup  plain yogurt
  • tsp  lemon juice
  • 1/2  tsp  honey
  • tsp  curry powder
  • 1/4  tsp  salt
  • fresh ground pepper
  • 2.5  cups  chopped cooked chicken
  • Pinch  salt & pepper
  • stalks celery
  • whole green onions
  • 1/2  cup  sliced almonds
  • 1/2  cup  raisins
  1. Make the dressing first to let it age a bit. Simply stir the mayo, yogurt, lemon juice, honey, curry powder, salt, and pepper together in a small bowl. Let it sit.
  2. Sprinkle salt and pepper on both sides of boneless chicken breasts. Cook thoroughly in a skillet. Set aside to cool. Note canned chicken can be substituted if you are in a hurry.

  3. Dice the celery into very small pieces and slice the green onions. Place the green onion, celery, sliced almonds, and raisins in a large bowl.
  4. Chop the chicken into small cubes and add to the bowl with the rest of the ingredients. Stir, then fold in the dressing.
