Curried Chicken Salad Recipe
This delicious Curried Chicken Salad Recipe is easy to make and delicious. It makes a perfect side dish to go along with the goodies cooked on the barbecue grill for your Memorial Day and Fourth of July cookouts.

Note: If you are in a hurry, substitute canned chicken breast and you can have the salad on the table in just a few minutes.
- 1/4 cup mayo
- 1/4 cup plain yogurt
- 1 tsp lemon juice
- 1/2 tsp honey
- 1 tsp curry powder
- 1/4 tsp salt
- fresh ground pepper
- 2.5 cups chopped cooked chicken
- Pinch salt & pepper
- 2 stalks celery
- 3 whole green onions
- 1/2 cup sliced almonds
- 1/2 cup raisins
Make the dressing first to let it age a bit. Simply stir the mayo, yogurt, lemon juice, honey, curry powder, salt, and pepper together in a small bowl. Let it sit.
Sprinkle salt and pepper on both sides of boneless chicken breasts. Cook thoroughly in a skillet. Set aside to cool. Note canned chicken can be substituted if you are in a hurry.
Dice the celery into very small pieces and slice the green onions. Place the green onion, celery, sliced almonds, and raisins in a large bowl.
Chop the chicken into small cubes and add to the bowl with the rest of the ingredients. Stir, then fold in the dressing.
