Chicken Potato Casserole Recipe
This Chicken and Potato Casserole Recipe is easy, filling, delicious and healthy! It is also a quite economical recipe!

- 8 red potatoes
- 4 slices bacon
- 10 crimini or button mushrooms
- 1 small diced onion
- 2 cups shredded chicken
- About a cup of green beans
- 1/2 cup heavy cream
- 1/2 teaspoon dried basil
- 1/2 teaspoon paprika
- 3 minced garlic cloves
- 3 tablespoons olive oil
- optional 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Preheat oven to 350
Slice potatoes into 1/4 inch slices and place in pot of water. Boil until tender. Â Drain and cool.
In a large pan over medium heat cook bacon until crispy. Remove onto paper towels.
Leave bacon grease in pan, add sliced mushrooms and saute until browned, remove.
Add onion, garlic and beans and saute about five minutes.
Combine all of the ingredients and mix. Spread the mixture into a casserole dish (top with cheese if desired) and place in the oven.
- Bake 25 to 30 minutes.
