I think you’ll love this beef and green bean casserole with mushroom parmesan cheese sauce.  It’s delicious and a one pot recipe that makes for easy cleanup. It’s also relatively economical.

We frequently eat some green beans with our beef, but I don’t think anyone has ever gotten the idea to combine the beef and beans into a casserole.  At least not with green beans.  We got the idea from our chicken and green bean casserole.  

One caution on this recipe.  The cuts of meat used are tougher meats that are generally used for meals that are slow cooked over a long period of time.  This recipe only simmers for about 15 minutes so you will want to tenderize the meat before cooking.

Three ways you can do this:

  1. Pound it with a mallet, but be careful to not get too carried away
  2. Salt the meat heavily an hour or two before cooking, then rinse the salt off and pat dry when you’re ready to start cooking the recipe.
  3. Soak it in a marinade with lemon or lime juice (or vinegar) for 30 minutes to two hours before starting to cook.

We prefer the first method.

Beef & Green Bean Casserole with Mushrooms and Parmesan Cheese

  • ▪ 1  Tbsp  olive oil
  • ▪ 1  Tbsp  butter
  • ▪ 1  cubed beef either round steak, chuck roast or stew meat
  • ▪ Salt and pepper
  • ▪ 4  cloves  garlic  minced
  • ▪ 1/2  lb green beans
  • ▪ 10  oz  mushrooms
  • ▪ ½  cup  chicken or beef broth unsalted
  • ▪ 1  tsp  onion powder
  • ▪ ½  cup  heavy cream
  • ▪ 2 tbsp corn starch
  • ▪ 2/3  cup  grated Parmesan cheese more for garnish

Instructions

Directions

  • Slice beef into cubes, slice mushrooms and mince garlic
  • Melt olive oil and butter in a large skillet on medium high heat.
  • Add beef, season it with salt and pepper.
  • Cook for 4 minutes on each side until browned.
  • Add garlic, beans and mushrooms. Sauté for about 5 minutes.
  • Add chicken/beef broth and onion powder. Simmer for 10-12 minutes until beans are softened. If it seems like there is too much liquid at this point, add some of the corn starch and mix/simmer until it thickens. Note: It will thicken more when you add the parmesan cheese, so you want it a little runnier than normal here.
  • Add heavy cream, stir and add parmesan cheese. Stir until cheese is incorporated with the sauce. Taste and season with more salt and pepper.
  • Serve warm and garnish with extra cheese, if desired.

This is another recipe that has everything going for it.  A one pot recipe, it’s easy to make and the cleanup is a snap.  It’s filling, utterly delicious, healthy and economical.

It provides enough nutrients that it can be a meal in itself, or it can be serve as a side dish.

What more can you ask of a recipe?

Some notes: Water can be substituted for the vegetable broth.  You can use either fresh or frozen spinach, though I prefer fresh.

One Pot Spanakorizo (Greek Spinach Rice) Recipe

  • tbsp.  olive oil
  • medium onion chopped
  • garlic cloves chopped
  • tbsp.  dill chopped and divided

  • Heat the olive oil in a large pot over medium-high heat and sauté onions until translucent.
  • Add garlic, then dill. Sauté for another minute or two.
  • Add the spinach, and cook for 3-4 minutes, just until it wilts down.
  • Add the salt, pepper, rice, and vegetable broth and stir.
  • Bring it to a boil, cover and reduce the heat to medium-low. Simmer for 20 minutes.
  • Stir in the butter and lemon juice.
  • Garnish with feta cheese and lemon wedges. Serve.

  • 2 tbsp / 30 g unsalted butter or olive oil

  • Melt butter. Add onion and garlic and sauté for 1 minute.
  • Add chicken and cook until it changes from pink to white but not fully cooked.
  • Reduce heat and the milk, stirring as you go.
  • Add broth, rice, thyme and a just pinch of salt and pepper.
  • Stir, bring to simmer, and cover. Turn down to medium low and cook for 12 minutes.
  • Ad spinach in batches mixing it in as you go. Cook for 3 minutes until spinach is wilted.
  • Fold in the cheese and stir until melted.
  • Serve immediately,

I think you’re going to love this recipe. It’s easy to make, healthy, delicious and because it is a one skillet recipe, clean up is a snap.

I was actually surprised at just how flavorful it came out.  I think the capers are the touch of magic in it so don’t skimp on them.

I chose to serve it over zucchini pasta, or zoodles as they are commonly called.  They make such a healthy substitute for wheat pastas, and if you are wheat sensitive or allergic to gluten, this is the way to go.  But serving it over pasta tastes great too.  If you’ve never made zoodles before we show you how to do it on this short video on how to spiralize zucchini.  I didn’t cook the zucchini in this recipe, but you can sauté it lightly in a hot skillet with olive oil.

  • 4 - 6 boneless skinless chicken breasts or thighs
  • Mozzarella cheese slices for each piece of chicken

  • Tbsp  Italian seasoning divided

  • 1/3  cup  white wine
  • 1 1/2  Tbsp  capers
  • cans 15 oz diced tomatoes
  • slices mozzarella cheese
  • Tbsp  fresh finely chopped herbs basil, parsley, or cilantro

  • Heat olive oil in a large skillet, over medium-high heat. Add chicken and season with salt and pepper.
  • Cook for 6-8 minutes on each side, seasoning each time
Transfer chicken to a plate and set aside.
In the same skillet, add garlic and sauté for about 1 minute.
  • Add white wine and scrape up the brown bits on the bottom of the pan with a spatula. 
Add tomatoes, 1 Tbsp Italian seasoning and capers. Mix well.
Return the chicken to the pan and top each piece with a slice of mozzarella.
  • Cover and simmer for about 10 minutes.
Garnish with chopped herbs and serve hot over zucchini noodles “zoodles” or pasta.

Turkey Sweet Potato Hash Recipe

  • 2 tbsp  olive oil
  • 1 lb extra-lean ground turkey
  • 1 clove minced garlic
  • ½ cup onions diced
  • ½ cup yellow bell pepper diced
  • 1 ½ cups sweet potato diced
  • Salt and black pepper to taste
  • A pinch of red pepper or red chili flakes
  • ½ cup shredded mozzarella cheese

Directions:

  • In a cast iron skillet, heat olive oil over medium-high heat. Add ground turkey, garlic and onions.
  • Cook for 4 or 5 minutes stirring occasionally and breaking up the turkey with the spatula
  • Add yellow peppers and the sweet potato, chili or pepper, salt, and pepper.
  • Cover and cook until sweet potatoes are tender and turkey is fully cooked, about 10 - 15 minutes. Stir occasionally. Note, adding a couple tablespoons of water helps the sweet potatoes cook faster.
  • Meanwhile, preheat the oven to 400 degrees.
  • When the sweet potato and turkey mixture is ready sprinkle shredded mozzarella cheese on top.
  • Place skillet in oven just long enough to melt cheese. (you can also use the broiler instead of heating the oven. It will give the cheese a “browned” appearance and crispy texture.

Notes

Note: If you don’t have cast iron cookware or another oven proof pan, you can simply turn off the heat when it is done, sprinkle the cheese on top and cover for a few minutes to melt the cheese.

There are a lot of reasons to make this hot spinach mushroom quinoa salad recipe.  It’s very easy to cook, very economical and it’s a one pot recipe for easy cleanup.  Best of all there is not one ingredient in it that isn’t completely good for your health.  

We know from watching Popeye that spinach is good for you, mushrooms are also noted for their healthy qualities, but I’ve learned quinoa is one of the most undiscovered superfoods there is.  The quinoa is a complete protein so when combined with the mushrooms and onions you have a nutritionally balanced meal.

Read our post on the health benefits of quinoa to see why you want to eat more of it!  Oh, by the way, I’m loving the new cookware you see in the photo above.  This is the first recipe I’ve tried it in.  It’s enamel coated cast iron that gives the even heating of cast iron with the cleanup ease of enamel.

  • Add spinach, reduce heat to low, and cook about one more minute, stirring frequently until spinach is wilted.
  • Add the cooked quinoa to the skillet. Cook about 1 more minute to warm quinoa (if needed).
  • Season with salt and pepper to taste and serve hot.

Notes

Note: This is also quite delicious cold. You can also substitute olive oil for the butter if you want it to be a vegan meal.

  • 12 ounces flank steak thinly sliced

  • 1/4 cup dark brown sugar

  • 3 cups fresh green beans
  • 3 cups sliced yellow bell peppers about 2 medium
  • 2 cups cooked rice

Directions:

  • Heat 1 tablespoon oil in a large skillet over high. Sprinkle salt and pepper on steak. Add steak to pan and cook until browned, stirring occasionally. Remove steak from pan (do not wipe out pan).
  • Combine sugar, soy sauce, and vinegar in a small bowl.
  • Add remaining 1 tablespoon oil, green beans and bell peppers to pan; cover, and cook 2 minutes.
  • Uncover pan; add soy sauce mixture.
  • Cook until vegetables are tender but still crispy and liquid reduces by half, about 5 or 6 minutes. Add steak; cook 1 minute.
  • Spoon rice onto 4 plates and top with beef mixture.

Note: You can also mix the rice in with the beef mixture just before serving as we did in the photos.

This chicken rice casserole has a lot going for it.  It’s healthy.  It’s economical.  And it is a one pot recipe that requires only a few minutes of prep time with cleanup that is a snap.

There are a number of chicken rice casserole recipes out there.  We add a few twists to ours that take it over the top.  One is that we mix some cheese through the casserole before baking it.  The other is that when we top it with more cheese for the final few minutes in the over, we also add some French fried onions.  They give it a nice little crunch and a dash of extra flavor.

Easy Chicken Casserole with Broccoli & Rice

  • 1 10.5 ounce can condensed cream of chicken soup Do NOT dilute
  • ¾ cup water
  • 1 cup uncooked brown rice
  • 1 lb. uncooked chicken breast diced
  • 1 12.6 ounce bag frozen baby broccoli florets
  • 1 cup cheddar or Mexican blend grated cheese divided
  • 1/2 6 oz can French fried onions

  • 1 Preheat oven to 375 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
  • 2 Add cream of chicken soup and water to the prepared dish. Whisk together until completely combined.
  • 3 Stir in uncooked rice, uncooked chicken, frozen broccoli and half of the cheese. Season with about ½ teaspoon salt and ¼ teaspoon pepper. Stir again.
  • 4 Cover tightly with foil and bake for 1 hour, or until the liquid is absorbed, the rice is tender, and the chicken is cooked through. 
  • A few minutes before baking is finished, top with the remainder of grated cheese and about 1/2 of a 6 oz can of French fried onions.  Continue baking until cheese melts.

Notes

With grocery prices soaring, this is a great recipe to keep in your file to make over and over again.  You can make it even more economical by keeping your eyes open for sales on chicken.  You can also add a bit of extra rice (increase water accordingly) to make it go farther.

  • Layer half of the potatoes, carrots, celery, and onion in a 3 quart casserole dish. Crumble half of the uncooked beef over vegetables. Sprinkle with 1/2 teaspoon each of thyme, salt and pepper.  Do the same with one more layer on top of this.
  • Top with tomatoes. Cover and bake at 350°for about an hour and 15 minutes until vegetables are tender.
  • Top with cheese and return to the oven just long enough to melt it.

Notes

This is a complete meal with all of your important food groups so there is no need to prepare any side dishes to go with it.

This easy chicken potato casserole recipe is perfect when you busy and need a filling, economical meal.  The prep time is less than 10 minutes and then you can be taking care of other things while it bakes.  It’s also a one pot recipe, so cleanup is a snap!

I like the juicier dark meat of chicken thighs over the dryer white meat of chicken breasts.  You can use whichever you favor.  The bone in cuts are cheaper, but the boneless are easier to eat!  The choices are yours.

After giving the potatoes a 15 minute head start, add the chicken to the top and continue baking until done.  The juices from the chicken keep them moist.

Chicken Potato Casserole Recipe

This chicken potato bake is the perfect recipe for when you are in a hurry!  While there is some baking time, the prep time is fast and you can be doing other things while it bakes.

Ingredients

  • Medium sized potatoes any type cut into 3/4" cubes don't peel, the peel has most of the vitamins.
  • tablespoon  Minced garic
  • 1.5  tablespoons  Olive oil
  • 1 tbsp Dried Rosemary
  • 1/8  teaspoon  Salt
  • 1/8  teaspoon  pepper
  • 4 Chicken thighs
  • 3/4  cup  shredded mozzarella cheese
  • Parsley  optional, freshly chopped

Instructions

  • Preheat oven to 425 degrees F
  • Place the potato cubes in a large bowl, add the garlic, olive oil, rosemary, salt, and pepper, and toss to coat.

  • Spray a large (9x13) baking dish with olive oil spray. 
  • Spread potato mixture in dish and bake 15 minutes.
  • Remove baking dish from oven and place the chicken pieces in the dish on top of the potatoes.  Brush the top of each chicken piece with a little olive oil and season with salt and pepper.
  • Bake 20-25 minutes, until chicken is cooked and potatoes are browned.
  • Sprinkle the mozzarella cheese over the top, return to the oven just long enough to melt the cheese.

  • Garnish with parsley if desired

Notes

If you use a larger baking dish than the one pictured, you can spread the chicken and potatoes out more evenly when adding the chicken.  However, using the deeper one pictured lets more of the chicken juices drip onto the potatoes.  Either way works fine.
