For most of us, 2020 has been hard on our wallets.  One of the places we can cut our budget is on the family meals.  But that doesn’t mean we have to skimp on flavor or nutrition.

Incorporating rice, pasta and potatoes into your meals make them feed more people for less money.  Chicken is more economical than beef.  Ground beef is cheaper than other cuts and can often be substituted in recipes.  Often ground turkey is more economical still.  It’s also lower in fat that beef so it’s good for your heart.

Also, take some time to review your kitchen appliances.  Having the right cookers, choppers, pots, pans, and knifes can make you a lot more willing to cook at home.

Here are some of our favorite recipes for when we need to save money.

Macaroni and Cheese RecipeNo Bake Macaroni and Cheese: This is the easiest of all the recipes to cook.  This is a recipe my grandmother passed down and it uses a blend of parmesan and cheddar cheese.  It’s a one pot recipe which makes your clean up easy (just the way we like it).

 

Chicken rice casserole recipeOne Pot Chicken Rice Casserole with Broccoli: This is our own variation of the traditional chicken rice casserole. We add broccoli to it for a flavor and nutrition boost.  Then near the end we add some cheese and french onions to the top and put it back in the oven until the cheese melts for a nice crunchy taste. Otherwise, you just put this one in the oven and forget it until it’s done.

Tuna casseroleBusy Day Tuna Casserole: This recipe is as easy to make as it gets.  We used diced green onion tops in it which give it an interesting flavor, but feel free to substitute some frozen peas or mixed vegetables.  

 

 

Economical One Pot Chicken Spinach Rice Casserole: This one is a winner all around.  As a casserole, it’s a complete meal.  It’s economical.  The spinach punches up the nutritional value and it has a creamy taste much like risotto.  

 

turkey hash recipeTurkey Sweet Potato Hash Recipe:  This is a bit like having Thanksgiving leftovers, but it’s an anytime meal that’s delicious anytime you make it. You can prepare this recipe in about 15 minutes.  

 

 

Lemon Arugula Pasta: Though it has pasta, this is a light, almost summery pasta salad.  If the budget is tight, there are a number of ingredients in this you can omit and still have a simply delicious meal!

 

 

Unstuffed Cabbage Rolls:  As the name implies, this is a cabbage roll recipe but it’s a lot easier to make!  Instead of wrapping the ingredients in cabbage leaves, you simply chop them all up and cook them together in one pan.  Just as delicious.

 

Unstuffed Bell Peppers: Once I had made the unstuffed cabbage rolls, I realized I could apply the same to bell peppers.  I have to say, I like my stuffed bell peppers a lot more when they are unstuffed.  When they are stuffed, I always felt the pepper was a container.  I ate everything out of the inside and then was left with this somewhat soggy bell pepper. 

Chicken bean casseroleChicken Green Bean Casserole with Mushroom Parmesan Sauce:  You’ll be surprised at how delicious this recipe comes out.  The mushrooms and parmesan blend together to form a delicious, rich, creamy sauce!

 

 

Hot Spinach Mushroom Quinoa Salad:  If you had to survive eating only one food, quinoa would be about the only one that would work.  It’s a complete protein and it’s loaded with nutrients. Quinoa is such a perfect food that it was recognized by the United Nations as a key factor in eradicating hunger and malnutrition. 

 

Garlic pasta recipeParmesan Garlic Butter Farfalle Recipe:  This is insanely delicious and easy! 

 

 

 

fried chicken recipeOne Skillet Chicken and Chickpeas:  I love chicken and chickpeas both, so that makes this one of my favorite recipes.  Easy to cook and cleanup is also easy.

 

 

 

Corned beef hashEasy Corned Beef Hash: Another one pot recipe for easy clean up.  We’re big on that.  We all have better things to do that scrub pans and clean kitchens!  Don’t we?

 

 

Chicken casserole recipeChicken and Biscuits Casserole: This is a chicken and potato casserole topped with golden flaky biscuits.  All made in one pan. A perfect comfort food for cool fall or cold winter days.  You can use a casserole dish, or a large cast iron skillet.  Your family will be asking you to cook this again and again.

 

Cajun Chicken with riceCajun Chicken with Brown Rice: A delicious economical one pot recipe.  This also includes a recipe for making your own Cajun dry rub for the chicken.

 

 

I hope this gives you some good dinner ideas to stretch your food budget.  As a final passing mention, even though you are trying to save on food costs, don’t skimp on nutrition.  It’s a false economy.  When you consume low nutrient foods, they tend to make you hungrier and you eat more.

Rosemary Chicken

There are so many ways to cook chicken and this is one of my favorites.  The balsamic vinegar might sound like an odd ingredient to use for chicken, but trust me this is delicious.

In terms of cooking time, this recipe takes less than 10 minutes.  But you want to make it ahead to allow the chicken time to marinate.  Marinate it for at least an hour, or make it up the night before and marinate it overnight.

You can cook this on an outdoor grill, a grill pan or an indoor electric grill.  Also feel free to substitute boneless chicken thighs if you prefer dark meat.

A delicious, flavorful rosemary chicken recipe that's easy to make and economical

Ingredients

Ingredients:

  • 2 pounds boneless chicken breasts or 4 chicken breasts
  • 4 cloves garlic
  • 1 tablespoon minced fresh rosemary leaves
  • 1/4 teaspoon black pepper
  • a pinch of red pepper flakes
  • 2 tablespoons dark brown sugar
  • 3 tablespoons tamari
  • 2 tablespoons olive oil extra virgin

Instructions

Directions:

  • Whisk the sugar, garlic, pepper, red pepper, rosemary, vinegar, tamari, and olive oil until well blended.
  • Lay out the chicken in a glass baking pan with high sides and pour the marinade over it.  Cover with plastic wrap tightly.
  • Allow to marinate at least an hour, preferably overnight to let the flavors really blend in.
  • When ready to grill, spray the grill with cooking oil, then preheat the grill to a medium high heat.  Grill for 3 to 4 minutes per side.  Adjust heat as needed to allow the chicken to cook fully.
  • Garnish with fresh rosemary sprigs if desired

I think you’ll love this beef and green bean casserole with mushroom parmesan cheese sauce.  It’s delicious and a one pot recipe that makes for easy cleanup. It’s also relatively economical.

We frequently eat some green beans with our beef, but I don’t think anyone has ever gotten the idea to combine the beef and beans into a casserole.  At least not with green beans.  We got the idea from our chicken and green bean casserole.  

One caution on this recipe.  The cuts of meat used are tougher meats that are generally used for meals that are slow cooked over a long period of time.  This recipe only simmers for about 15 minutes so you will want to tenderize the meat before cooking.

Three ways you can do this:

  1. Pound it with a mallet, but be careful to not get too carried away
  2. Salt the meat heavily an hour or two before cooking, then rinse the salt off and pat dry when you’re ready to start cooking the recipe.
  3. Soak it in a marinade with lemon or lime juice (or vinegar) for 30 minutes to two hours before starting to cook.

We prefer the first method.

Beef & Green Bean Casserole with Mushrooms and Parmesan Cheese

An economical, one pot recipe that's delicious and easy to make
Prep Time 5 minutes
Cook Time 20 minutes
Servings 4

Ingredients

Ingredients

  • ▪ 1  Tbsp  olive oil
  • ▪ 1  Tbsp  butter
  • ▪ 1  cubed beef either round steak, chuck roast or stew meat
  • ▪ Salt and pepper
  • ▪ 4  cloves  garlic  minced
  • ▪ 1/2  lb green beans
  • ▪ 10  oz  mushrooms
  • ▪ ½  cup  chicken or beef broth unsalted
  • ▪ 1  tsp  onion powder
  • ▪ ½  cup  heavy cream
  • ▪ 2 tbsp corn starch
  • ▪ 2/3  cup  grated Parmesan cheese more for garnish

Instructions

Directions

  • Slice beef into cubes, slice mushrooms and mince garlic
  • Melt olive oil and butter in a large skillet on medium high heat.
  • Add beef, season it with salt and pepper.
  • Cook for 4 minutes on each side until browned.
  • Add garlic, beans and mushrooms. Sauté for about 5 minutes.
  • Add chicken/beef broth and onion powder. Simmer for 10-12 minutes until beans are softened. If it seems like there is too much liquid at this point, add some of the corn starch and mix/simmer until it thickens. Note: It will thicken more when you add the parmesan cheese, so you want it a little runnier than normal here.
  • Add heavy cream, stir and add parmesan cheese. Stir until cheese is incorporated with the sauce. Taste and season with more salt and pepper.
  • Serve warm and garnish with extra cheese, if desired.

We made our New Year’s resolutions on New Year’s Eve while tossing back a few too many cocktails. Now as we wake on New Year’s Day with a hefty hangover, all of those get healthy in the New Year resolutions have taken a back seat to the hangover blues.

Here is a quick smoothie that can help you get back on track fast.  It’s a delicious and easy to stomach drink packed full of the nutrients your body needs to repair and rejuvenate after a night of over-indulgence.  Among other things, alcohol is a diuretic and caused you to flush out too many of your electrolytes.  The cup of coconut water in this smoothie will give you 250 mg of sodium and about 600 mg’s potassium to help replace what you lost and help flush out the toxins from the alcohol.

Banana is also high in potassium and along with the blueberries provides an abundance of micronutrients and complex carbs to give your body the fuel it needs to repair.  Quinoa is a superfood that is a complete protein and the yogurt also gives you protein to help with your stamina and some probiotics to help get your stomach back on track.

This insanely healthy smoothie is one of the most delicious among our smoothie recipes. It has a light fruity summery taste with notes of vanilla to round off the flavor.

Rooibos tea is known for a long and impressive list of health benefits It has 50% more antioxidants than green tea to help mop up the free radicals in your body, reduce inflammation and thus help prevent cellular damage. Research shows it helps boost the master antioxidant in your body, glutathione, and helps with detoxification.

Rooibos tea also contains aspalathin, found only in rooibos tea, and nothofagin. These are two polyphenols that have been shown to have powerful anti-inflamatory benefits and cancer fighting powers.

There are too many health benefits to list them all but then include helping with bone health, weight loss, digestion, and so much more.

Brew the rooibos tea on the strong side. If you can’t find the Strawberry Kiwi Rooibos Tea blend, regular rooibos tea will work. The quinoa is optional. It’s a complete plant based protein and nutrition booster so I add it to most of my smoothies. The banana is added more to thicken the smoothie than for flavor. It you don’t mind your smoothie being a little less thick, try omitting the banana.

This almond milk pear smoothie has a bit of a different taste. Sort of a sweet and sour. Definitely delicious and healthy.

Grate a bit of the lemon peel off the edges of the lemon before peeling it and reserve the zest for a garnish.  Also check out our recipe for how to make your own almond milk.  While it’s convenient to buy it at the store, making your own is easy and preservative/additive free!

Almond Milk Pear Smoothie

A healthy smoothie with a sweet and tangy taste

Ingredients

Ingredients:

  • 1/2 cup fresh spinach leaves packed
  • 1/2 pear cored
  • 1/2 lemon seeds removed and peeled
  • 1/8 cup chia seeds
  • 1/8 cup flax seed
  • 1 cup unsweetened almond milk

Instructions

Directions:

  • 1 Add all ingredients to the blender and blend until smooth, about 60 seconds
  • 2 Pour into a glass and garnish with the lemon zest and enjoy

There are those of us that can’t consume dairy products. Almond milk makes a great substitute and it works well for any use where you would use regular milk.

You can buy almond milk in cartons at the store for a reasonable price, but like all store bought products it will have additives in it. Truth is almond milk is so easy to make there’s no reason not to. It’s just a couple of easy steps.  Other than the soaking time, you can make it in minutes.

Perhaps the main thing about this recipe is to remember to soak your almonds overnight. If you forget, you can boil them for about 20 minutes, but the milk won’t be quite as creamy.  I recommend using a high powered blender such as a VitaMix or a NutriBullet.  You’ll need nut milk bags to strain the milk and they can be a bit hard to find so I added a link to order them from Amazon.

This recipe is for unsweetened almond milk. If you would like it a bit sweet, add a couple of dates to the blender while blending. You can also add a bit of honey or maple syrup.

How to Make Almond Milk

How to make preservative free homemade almond milk.

Ingredients

Ingredients:

  • 1 cup raw organic almonds
  • 3 cups purified water

Instructions

Directions:

  • Place the almonds in a bowl and cover with water. Allow to soak overnight
  • Drain and rinse almonds
  • Put the almonds in a high powered blender with 3 cups of water. Blend 1 to 2 minutes until the liquid looks milky and the almonds are very finely chopped.
  • Put a nut milk bag or clean dishtowel in a bowl or pitcher and pour the mixture into the bag. If using a dishtowel be sure you will be able to gather all of the corners together. Let the milk drain through and then squeeze the remaining milk out.

Notes

Notes:
The milk will keep in your refrigerator for about 4 or 5 days. You can save the pulp that you strained out and let it dry into almond flour for baking.
