I just discovered Autumn Cheese and I’m betting you have yet to discover it as well. So I thought I should tell you about this delicious treat!

CheeseBy Autumn Cheese I’m not referring to all the autumn cheeseboards that come up when you Google Autumn Cheese.  It’s a actual cheese that’s available only a short time each year and apparently so rare that it doesn’t even come up in a Google search!

I opened the cheese and put a little sliver on a cracker.  One bite and I was in love.  I decided this was a must for my holiday tables!  Autumn Cheese is a soft cheese with decidedly unique flavor profile and a smooth rind that has been washed numerous times during the aging process.  It has a creamy, buttery flavor and texture with earthy, nutty undertones.

The cheese is made by the Chimay Dairy in Belgium.  The dairy was established in 1850 by three monks and over the years they have perfected the cheesemaking process to a fine art making cheeses collected daily from local dairy farms.

The only place I have seen this cheese is in Trader Joe’s and only during the fall season.  And trust me on this one.  The color, texture and unique flavor profile of this cheese demand that it be served with artisan crackers on your holiday dinner and party tables.  Your guest will never forget it.  

You can also use it for some mind blowing grilled cheese sandwiches and any other place you would use cheese, but it is a little bit pricy for some uses.  I also feel this is a cheese deserving of having its own place on the table with nothing other than a cracker to place it on.

Just about everyone has stories about the fruit cake Aunt Bessie or some other relative gives them for Christmas each year.  You know, the one that gets used as a brick to prop open the window the rest of the year…

As a kid I would hear these stories and wonder why everyone hated fruit cake so bad.  I loved it.  Then one year someone gave me one of those “fruit cakes” and I realized I had never had the “fruit cake” others were talking about.  In my family fruit cakes were a delicious boiled raisin cake my grandma used to make, and Stollen, the traditional German fruit cake.  If you haven’t had Stollen, you owe it to yourself to try it.

Stollen is a traditional German bread usually eaten during the Christmas season, when it is called Weihnachtsstollen (after “Weihnachten”, the German word for Christmas) or Christstollen (after Christ).

The reason Stollen is such a welcome relief from the usual fruit cake is that it is yeast bread, not a cake.  I would say it is like a fruit cake only because it has dried fruits and nuts it such as candied orange peel, raisins, almonds.

Just as a true Danish pastry is flakier and lower in sugar than the US counterparts, Stollen dough is low in sugar (though the fruits have a high sugar content). The bread is slathered with melted unsalted butter and rolled in sugar as soon as it comes out of the oven, resulting in a moister product that keeps better.

Unless you are really into baking breads, Stollen is not what I consider to be one of the easier recipes to make.  I find there is usually a nice selection of them in the food section at Cost Plus (formerly Pier One) around Christmas time.  The Marzipan Stollen is the best in my opinion (Marzipan is a confection consisting primarily of sugar or honey and ground almonds that is layered in with the Stollen dough).

I can’t recommend enough that you try it this Holiday season.  And once Aunt Bessie has a slice of it at your house, she might just stop bringing you those window props every year for Christmas.

Traditionally candy corn is thought of as a Halloween or Thanksgiving treat, but I think we like to eat it all year long.

Anyway, it just doesn’t seem like Halloween if a candy dish of candy corn isn’t set out. Candy Corn is one of the most popular candies for Halloween.  It can be creatively displayed, such as in this Ceramic Spider Halloween Candy Bowl and used as decorations.  Small individual servings bags of Candy Corn also make great Trick or Treat candy.

History of Candy Corn

To me, Candy Corn was something we got out of a package, usually made by Brach’s Candy.  I was a bit surprised to learn it has a long history and was originally made by hand.

According to Wikipedia, Candy Corn was created in the 1880s by George Renninger of the Philadelphia, PA-based Wunderle Candy Company. Other companies got involved in making it and it has gone by other names such as “Chicken Feed” in an effort to market to the rural society at the turn of the 20th Century.  Rural or not, I’m surprised the candy survived.  Chicken Feed doesn’t make it sound very appetizing!

Originally the candy was made by hand. Now machines are used but the recipe is about the same.  The production method is called “corn starch modeling”

A number of color variants have been created for other holidays including Thanksgiving (one called Indian Corn), Christmas (red and green colored), Valentines Day and Easter.

According to the National Confectioners Association, more than 35 million pounds (or 9 billion pieces) of candy corn will be produced this year.

As we move into the fall season, gourds and baby squash like those pictured are in most stores and they contribute to an attractive table or buffet setting.  They will last weeks, some indefinitely, so you can use them many times.

Pumpkin ice cream, gooey sugar cookies and Caramel Apples.  Put this out as a Halloween treat and your family and friends will love you.

Sorry, I don’t have a recipe for the pumpkin ice cream.  I haven’t made homemade ice cream since my grandma used to make it in the back yard during the summer months.  This ice cream was purchased at Trader Joes.  Each year they go on a pumpkin flavored food kick in October.  Pumpkin flavored scones, ice cream, stuffing, and candy.

I know a lot of people aren’t fortunate enough to have a Trader Joe’s nearby, so if you love pumpkin flavor, you might want to try this pumpkin syrup. It can be used as a flavoring in drinks, recipes, and a topping for ice cream.

Royal Dansk Butter Cookies have been a part of Christmas for as long as I can remember.  The would be set out on a plate on Christmas Eve with a cup of hot chocolate, or a glass of milk.  As I grew older I would find tins of Danish Butter Cookies in all of my clients offices, and quite frequently I would get them as a gift from my vendors.

Without them I would feel I had been cheated of one of the best parts of the holiday season.

When I think of the holidays, it is always the foods that make them special. These mini pecan pies with a drop of chocolate on top will please your family and guests.

The ones pictures were purchased at Whole Foods in the specialty bakery case. They were placed in a setting of rich ambers and browns to go with the fall season. Of course you are welcome to cook them from scratch, but we chose to use the time to prepare other foods!
