Avocado toast with cottage cheese

This avocado cottage cheese toast recipe is something I invented when I wanted a healthy snack. I wasn’t sure how good it would taste, the ingredients seemed a bit of an odd mix to me.  Though thinking about it I’m not sure why.  I put avocado with cottage cheese all the time.  The only difference was the toast.

Normally I don’t mention brands, but in this case I think it is important.  I created this for a healthy mid-day snack and I didn’t want to add anything to it that wasn’t healthy.  Namely the bread.  The bread I used for this is Ezekiel sprouted grain bread.  It uses wheat, barley, beans, lentils, millet and spelt and claims to be completely flourless.  Somehow they have the sprouting process down to such a science they can turn it into a bread without drying it and grinding it into flour.  This and the sprouting process keeps all of the nutrients intact.  

It doesn’t claim to be gluten-free, but it doesn’t bother me the way other breads do (even the so-called gluten-free ones).  Maybe it was processing all the nutrients out of bread that gave me problems, not the gluten….

I’m not putting finite ingredient measurements on this recipe.  I think it is easy to see how much you need to use.  On your cottage cheese, select a brand that isn’t too runny so you don’t make your toast soggy.

Ingredients
  • small curd cottage cheese
  • 1 large avocado ripe but still firm
  • 2 slices Ezekiel bread toasted
  • salt and pepper to taste
Instructions
  1. Toast the bread, then scoop on some cottage cheese and add avocado on the top.  I cut my avocado into cubes rather than slices and it makes it easy to next them in the cottage cheese.  Add salt and pepper to taste and enjoy.
